Alloo Methi
(Potatoes with Methi/Fenugreek Leaves)
To prepare Alloo Methi
Par boil:
Potatoes cut in large bit size pieces
Sauté:
(In mustard oil, or your choice of flavorful oil)
Onion, thin half slices
Garlic, minced
Ginger, minced
Chili, sliced (optional)
When onions, garlic, ginger, and chili are softened . . .
Add:
Cumin seeds
Turmeric
Panch Phoron* (Sparingly, assertive flavor)
Salt to taste
Add in par-boiled potatoes.
Add some water and let steam briefly.
*Panch Phoron five spices mix
