We're not gonna give you chapter and verse — your Cat expects you should know how to boil water, or slice an Onion. In this instance, because there are so many approaches to this Lion's Head recipe, for the particulars go search. Heck, nobody's asking — well one guy is [you know who you are] — so no need to give the whole spiel when it's already fully elucidated online anyway. Even the origin history. This blog is for folks who do the do. Not just for the quite obvious literary pyrotechnics Cooky Cat brings to the Cuisinaria.</span></p><p><span style="font-family: times; font-size: large;">Lion's Head: Big 'ol flavorful meatballs resembling the proud head of the Lion. Chinese Cabbage to resemble the mane; ideally, the Celery Cabbage version; long and narrow. Get it? Long strands of Cabbage = Lion's mane. Or, Bok Choy is also a good accompaniment. Go from there. Oh, you want something to go on, don't you? Okay ...</span></p><p><span style="font-family: times; font-size: large;">First, though. This is one recipe that is fairly easy to make; but, for this Cat, rather complicated to write. Not deterred, however. But, advising to search this recipe online and get a sense of the variations; then go with how you want.</span></p><p><span style="font-family: times; font-size: large;">The idea for this recipe was based on wanting to make the Lion's Head meatballs for a nice soup. The left over noodles were added for the second recipe which is closer to the classic. But, as we will do, shucking and jiving with elements to please this Cat's finnicky palate.</span></p><p><span style="font-family: times; font-size: large;">The meatball recipe is taken from The Classic Chinese Cookbook by Mai Leung, 1976 [first edition ... eat your heart out].</span></p><p><span style="font-family: times; font-size: x-large;"><b>Lion's Head Meatballs:</b></span></p><p><span style="font-family: times; font-size: large;"><b><i>1 pound ground Pork</i>. </b>[Makes 8 handful sized Meatballs.] Some say hand minced is the best. Decision point #1. We use store boughten fresh ground Pork; or, grind our own. Knife minced ... only when the Queen is coming to dine.</span></p><p><span style="font-family: times; font-size: large;"><i><b>5 Chinese Mushrooms.</b> </i>Soak-softened in hot water. Stems removed. Minced.</span></p><p><span style="font-family: times; font-size: large;">[<i><b>1 T Cloud Ear Mushrooms</b></i> softened in hot water, minced. We omitted this one since we didn't have in the pantry. No bit whoop.]</span></p><p><span style="font-family: times; font-size: large;"><i><b>1/2 Cup minced Water Chestnuts.</b></i></span></p><p><span style="font-family: times; font-size: large;"><b style="font-style: italic;">1/2 Cup minced Bamboo Shoots. </b>We didn't have on hand, so not in our batch. Again, maybe an extra trip to the store for the Queen.</span></p><p><b style="font-family: times;"><i><span style="font-size: large;">2 Scallions, minced.</span></i></b></p><p><span style="font-family: times; font-size: large;"><b><i>1 T dry Sherry, or Chinese cooking Wine.</i></b></span></p><p><span style="font-family: times; font-size: large;"><i><b>2 T Soy sauce.</b></i> [Original recipe calls for black Soy sauce.] We don't keep it since it's rarely used. Don't tell, no one's the wiser.</span></p><p><span style="font-family: times; font-size: large;"><b><i>1/2 tsp. Sugar.</i></b></span></p><p><span style="font-family: times; font-size: large;"><b><i>1/8 tsp. Pepper.</i></b></span></p><p><span style="font-family: times; font-size: large;"><b><i>1 1/2 T Cornstarch.</i></b></span></p><p><span style="font-family: times; font-size: large;"><b>[</b><i style="font-weight: bold;">1/4 tsp. MSG optional </i>per 1976 recipe. In our kitchen ... no way!]</span></p><p><span style="font-family: times; font-size: x-large;"><b>Preperado:</b></span></p><p><span style="font-family: times; font-size: large;"><b><i>Mix it all up.</i></b> I can't believe we even have to mention this step. But, you never know who's reading. </span></p><p><span style="font-family: times; font-size: large;">Now comes the decision point #2. How do you want to cook your balls? [Very subtle ex-wife reference.] ...</span></p><p><span style="font-family: times; font-size: large;">We poached the meatballs in the Chicken stock for the soup. Or, you can pan fry to get a golden crust to seal in the flavors and juices. Or, deep fry; in such case even coat with Egg dip and Panko coating, or flour. ["Panko", that is not a Dog reference ... you-know-who will get that quip.]</span></p><p><span style="font-family: times; font-size: large;"><b><i>Decision point #3:</i></b> Now for what you wanna accompany? Classic is to braise the Meatballs with thickish strands of Chinese Celery Cabbage. Braising liquid, you are on your own. Chicken broth we prefer.</span></p><p><span style="font-family: times; font-size: large;">We made a soup of it with thinly sliced Napa Cabbage and fresh Wonton Noodles. And some Bean Sprouts. Chopped fresh Cilantro leaves and thinly sliced Scallion for garnish. That latter ... a must have finish for all Cooky Cat Chinese dishes. And, Indian too. Okay, on just about anything savory. Kapische? Copy your Cooky Cat! You like.</span></p><p><span style="font-family: times; font-size: large;">Decision point #4: We served two each of the eight meatballs with the soup. Some left over cooked Noodles reserved for later. For the second dish as pictured above we stir fried coarsely chopped Napa Cabbage, Scallion sticks [consider to use them as a vegetable], Bean sprouts, and softened dry Tofu skin ["Yuba"]. Don't let that last item trip you. It's got a earthy taste and chewy texture ... nice; you like. Tossed in the remaining 4 meatballs, then the left over Noodles. </span></p><p><span style="font-family: times;"><span style="font-size: large;">NB: The above is not the last word. You can add or subtract as your own taste directs. Our dish, it could have used a bit more color. Maybe some dark green vegetable. Or, Carrot slices for the color jazziness. You decide based on what you can imagine you'll be likey in the eating of this dish. Those meatballs though, WOW! Things do have their own taste and Cooky Cat stands for letting the ingredients speak for themselves. <br /><br /> His motto: Create meals from what looks good at the market, always looking first for what is seasonal, fresh, and local. Shopping to a recipe is a way to go, but many times slavishly sticking to that approach can be frustrating if you can't find the ingredients; it forces compromises if what's only available is of lesser quality, and it is certainly the most expensive approach. A beautiful mélange of rice and eggs stir fried with a mix in of some vegetables for texture and usually some protein(s). On that "protein" bit, don't rule out Seitan. Best versions with plural such proteins. [Can't beat a combo of cured ham bits, Pork, Chinese Sausage, and Scrimpts.]</span></p><p><span style="font-family: times; font-size: large;">Actually, if you want a recipe for such a dish, just go out and have yourself an order, or so. The ingredients are all there on the plate. [We could get into a lively discussion on how a seasoned, well-used Wok will have a signature emparted to the dish. Well, that's a thing. Look up Wok Hay — "the breath of the Wok". But, hey, what the Wok.]</span></p><p><span style="font-family: times; font-size: large;">The big choice in making Fried Rice is in what you do first.</span></p><p><span style="font-family: times; font-size: large;">Cooky Cat stir fries the mix-ins first. Then set aside and mixed into the Rice/Eggs to finish.</span></p><p><span style="font-family: times; font-size: large;">So now to the real quandary of Fried Rice. Which comes first, the Rice, or the Eggs. If you take a gander on some videos you'll often see restaurant style cooking where the Rice and Eggs go in together and get the bejesus stir fried out of it. We like to stir fry the Rice [Peanut Oil, please — unless there's an allergy] then move it over and add the beaten Eggs to the empty side of the pan, scramble, then mix the Eggs and Rice. Or, scramble the Eggs separately, then add in later. That latter version gives lots of definition of Egg in the Rice. You can fry together for a more homogeneous texture.</span></p><p><span style="font-family: times; font-size: large;">The video below shows a rather persnickety process with the Rice. Honestly, we never went that far. And, probably won't. Really ... separate the Rice, lay out on a sheet pan, and let to dry overnight in the frig? GIVE ME A BREAK! Don't be a cooking arsehole and go shopping for every ingredient in a recipe. You'll go nuts. Which, by the way, add some in to the dish if you like. Like, toasted chopped Peanuts. Go nuts!</span></p><p><span style="font-family: times; font-size: large;">Seems Mung Bean Sprouts is a natural. Crunch factor. No Sprouts? We use shredded Cabbage. Celery, for sure! Also, gotta have Scallion. We like also Cilantro leaves chopped. From Claiborne and Lee, Peas please. </span></p><p><span style="font-family: times; font-size: large;">On those proteins. Best version: Pork, Skrimps, slices of Chinese Sausage, bits of cured Ham. Chicken instead of Pork. Beef ... nah. Chicken and Pork; hey, you're an adult now. If you want.</span></p><p><span style="font-family: times; font-size: large;">Flavorings. Soy sauce and Oyster sauce. Or, neither. If you want to ratchet it up <i>Orientale</i>, finish with toasted Sesame Oil. But, like I said, it doesn't have to be "Chinese". See what you like and use that. Some you may know. Some, definitely will be new. And, illuminating. Illuminating, as in poach those Eggs with the lights on.</span></div><div style="text-align: left;"><span style="font-size: medium;"><br /></span></div><div style="text-align: left;"><span style="font-size: medium;">Here's the skinny:</span></div><div style="text-align: left;"><span style="font-size: medium;"><br /></span></div><div style="text-align: left;"><span style="font-size: medium;">1. <b>Simmering Water.</b> Bring a shallow pan with acidulated water to a slow simmer. <b>Acidulate</b> with one Tablespoon of white or Cider Vinegar per quart of water. That makes the whites firm faster.</span></div><div style="text-align: left;"><span style="font-size: medium;"><br /></span></div><div style="text-align: left;"><span style="font-size: medium;">2. Sometimes water collects inside an Egg. When you drop it in directly to the simmering pan the water in the Egg makes it spread out into those pesky, oh so thin strands. Result: misshapen. Waste.</span></div><div style="text-align: left;"><span style="font-size: medium;"><br /></span></div><div style="text-align: left;"><span style="font-size: medium;">What to do? <b>Separate out whatever water is inside egg</b>. Per that ultra enthusiastic Natasha Kravchuk of Natasha's Kitchen, crack your Egg into a fine mesh strainer. That'll separate whatever water there may be. Then gently slip the egg into the simmering water. </span></div><div style="text-align: left;"><span style="font-size: medium;"><br /></span></div><div style="text-align: left;"><span style="font-size: medium;">3. <b>It's done when the yolk is just beginning to set, 2 to 4 minutes.</b> If you are using Eggs cold from the refrigerator will, of course, put doneness to closer to the 4 minute mark.</span></div><div style="text-align: left;"><span style="font-size: medium;"><br /></span></div><div style="text-align: left;"><span style="font-size: medium;">4. Alternatively, Julia Childs instructs to <b>make a pin prick into the fat side of the egg to remove any air. Then put the whole egg — at room temperature — into a boiling pan for 10 seconds to set the Eggs ever so, so.</b> That keeps it's shape. Then, you crack and slip into a gently simmering pan. We suggest to poach in a different pan of water from the first step; hygiene. </span></div><div style="text-align: left;"><span style="font-size: medium;"><br /></span></div><div style="text-align: left;"><span style="font-size: medium;">5. <b>Lift the poached eggs out with a slotted spoon.</b> Test with a gentle touch for doneness.</span></div><div style="text-align: left;"><span style="font-size: medium;"><br /></span></div><div style="text-align: left;"><span style="font-size: medium;">6. <b>Slide poached Eggs into an ice Water bath to stop the cooking. Like, if you know from experience, they are very prolific. Grow larger, and larger overnight. So, you give them away. Friends smile, politely. "Oh, joy! More Zucchini!"</span></p><p><span style="font-size: medium;">Well, do this. Make a pickle.</span></p><p><span style="font-size: medium;">Simple. Slice up a Zucchini, make a Vinegar brine, toss the slices in the boiling brine until softened, but still crisp.</span></p><p><span style="font-size: medium;">Okay?</span></p><p><span style="font-size: medium;">You have questions? </span></p><p><span style="font-size: medium;">The main thing to pickle is the <b>Zucchini</b> itself. We usually add sliced Onion. Today we added slivers of sweet Red Bell Pepper.</span></p><p><span style="font-size: medium;"><b>The Brine:</b> Listen ... it don't have to be 100% Vinegar. Unless you like it that way. Our time tested brine recipe specifies 1 part white Vinegar to 2 parts clean water [Spring or filtered; not from the tap.] Do it! Vinegar : Water, 1:2. You might like it 1:1. Somewhere between those two ratios will give you a nice pickle brine.</span></p><p><span style="font-size: medium;"><b>How Much Brine?</b> Good question. Here's a waste not want not formula. Make enough raw sliced vegetables to fill the selected jar. Prepare maybe 20% more to account from shrinkage after the vegetables are blanched in the brine. Fill the jar to the top with the raw vegetables. Add water to fill. Drain water and measure. That's the amount of brine! Don't get nervous that there isn't enough brine. The vegetable shrink as they blanch. Keep stirring. You'll see.</span></p><p><span style="font-size: medium;"><b>Spices: </b>Mustard seeds, Coriander seeds. Whole black Pepper seeds. A little Turmeric for color. Sweeten brine with Cane Sugar. We eschew Salt, but you may want to add some. Optionals: Chile de árbol and/or Jalapeno slices if you lika da heat.</span></p><p><span style="font-size: medium;"><b>Preparation:</b> Bring the brine to a boil and add Zucchini slices [and whatever else you throw in there with it]. Bring back to a boil. This for Zucchini is enough to soften the slices, but still have them crispy. Transfer to a sterile jar, fill to the top with the brine, seal the lid. Let cool on the kitchen counter. Refrigerate. A day or so later ... Pickled Zucchini!</span></p><p><span style="font-size: medium;"><b>BTW:</b> This recipe you can adapt for just about any vegetable you want to pickle. Used to be that a cup of Coffee was a cup of Joe. Mama perked it up every morning in that trusty pot. Delicious. I love percolator made Coffee.<br />
<br />
Later in my travels I found myself an Ad Biggie in the Big Apple assigned as an account executive on a major national Coffee brand. Part of the initial orientation was a day downtown at the Pan-American Coffee Bureau. Their big point was that the best cup of Coffee was made by the filter frip method. I got it. Not overcooked, retains all the subtle flavor elements.<br />
<br />
At the time I remember putting this idea in front of my client counterpart, the Brand Manager. He may have conceded the point, but came back with the marketing reality that percolar sales were strong, and growing. In marketing you go where the action is. Unless, of course, you have a game changer product or service to offer. Coffee ... is a commodity. Not new. You compete on flavor claims. Or, some other hoked up point to make a difference from the competition. Like, "Makes other beans has-beans!"<br />
<br />
I totally missed the larger point. We all did. It wasn't the percolator <i>method</i>, it was the appliance. A smart fellow not long after brought out Mr. Coffee. The rest is history. That was a game changer, for sure. And, a rather very obvious lesson in thinking outside the box.<br />
<br />
As of late we've been seeing a whole new universe of Coffees and Coffee prep paraphernalia.<br />
<br />
Drip seems to be the de de rigueur method among the Coffee cognoscenti. Then there's the question of grind.<br />
<br />
It's universally accepted that grinding your beans just before brewing is the way to go. Unless you use the grounds right out a freshly opening can/box/bag.<br />
<br />
Freshness is a whole nother subject. Seems those beans start to go south really fast. How to keep them fresh, it's still a mystery to us. Those beautiful bins and baskets and barrels of rich brown Coffee beans in the store, stay away. It's just a merchandising ploy. Flavor-wise, not so much.<br />
<br />
There a two grind methods. The blade grinder. And, the burr grinder. The burr grinder is all about getting uniform particles. This is especially true if you're making Espresso. For that morning cup of Joe, it doesn't seem to make that much of a real difference. Read on.<br />
<br />
Here we enter the philosophical question of the difference between a theoretical difference and a practical one. It's importance since the difference between the blade grinder and the burr method is a factor of at least six times the cost. At least. And, again, if you are going for Espresso, then you are getting into some pretty rare — make that cost — territory. That's where you definitely need a burr appliance. Unless you buy some packaged, or have it custom ground in store.<br />
<br />
If you are wrasling with what to do to get that better cup of Coffee, check this video and get some sobering knowledge. Hint: the inexpensive blade grinder works just fine, thank you. [If, on the other hand, you want to impress; then burr, boy, burr.]<br />
